Fun Meal Prep with Children

BBQ Grilled Chicken Sliders
2 large boneless chicken breasts (cut in 1/4)
1 tablespoon olive oil
Pinch crushed red pepper
1 tablespoon seasoning salt
1 teaspoon black pepper
1 tablespoon garlic powder
Your favorite BBQ sauce
1 cup spring lettuce mix
2 tomatoes (sliced; 8 slices total)
8 slider buns (Hawaiian Rolls preferred or Martin’s Potato Dinner Rolls)
- Preheat skillet or grill pan (preferred) on medium heat on stove top.
- Mix in a large bowl, the chicken, olive oil, crushed red pepper, seasoning salt, black pepper and garlic powder.
- Preheat oven on 400°.
- Place seasoned chicken in skillet or grill pan on stove top, let sear for three minutes on first side, then turn chicken on other side and sear for three more minutes.
- Remove chicken from heat then brush liberally with your favorite BBQ sauce. Then place pan in preheated oven for five-to-seven minutes to allow sauce to stick to chicken. Remove from oven then place each piece of chicken on a bun. Layer with spring mix lettuce and sliced tomatoes.
